Romeo is our longest-aged cheese: it’s a brined, cooked-curd goat cheese that is tended to for up to 15 months. During this long aging, it acquires deep, complex flavors and a crystalized paste that’s quite reminiscent of Grana Padano. This cheese can be served on a cheeseboard or grated over a variety of dishes. The average weight is 4 pounds per wheel.
