Caproncino is a tangy, semi-hard goat cheese is cultured like the Capriago but is further developed by cooking the curd for a dense, nubby texture. We then age the cheese for six to eight months, allowing for impressive depth of flavor. This cheese makes a fine finish to any meal. The average weight is 1.5 pounds per wheel.
